Strawberry Peanut Butter Pie recipe

Preparation Time: 1 hours

Peanut butter is the star of this strawberry pie, used in the crust, filling and in the topping, too. Serve it with a scoop of strawberry ice cream and a drizzle of strawberry coulis for a delicious pud.


  • 60g butter, melted
  • 85g crunchy peanut butter
  • 15 digestive biscuits
  • 200g creme fraiche
  • 200g cream cheese
  • 25g icing sugar
  • 1/2 tsp. vanilla extract
  • 2 tbsp. peanut butter
  • 250g strawberries, hulled, sliced
  • 40g peanut brittle, crushed
  • Icing sugar to dust


  1. Melt the peanut butter and butter together in a small saucepan. Crush the biscuits until the form fine crumbs, either in a food processor or by bashing with a rolling pin. Mix with the butter until the biscuits look like wet sand, then spoon into a greased and lined sandwich tin. Press firmly down into the tin and up the sides to create a tart case. Put into the freezer for 30 minutes.

  2. Meanwhile, make the filling. Beat the creme fraiche, cream cheese, icing sugar, vanilla and peanut butter together until thick with an electric whisk, then spoon onto the base and smooth out the top. Arrange the strawberry slices on top and then sprinkle the peanut brittle on top. Dust with icing sugar.

If you don't like peanut butter, you can just leave it out - the tart will still be delicious. Recipe serves 8.
