Strawberry Polenta Cake recipe

Preparation Time: 20 minutes | Cooking Time: 50 minutes

This squishy Italian-style cake is made with polenta, which gives it a fantastic texture. Perfect as it is, it's also delicious topped with an olive oil icing.


  • 175g polenta
  • 250g caster sugar
  • 4 eggs
  • 75g plain flour
  • 1 tsp. baking powder
  • 175g unsalted butter
  • 1/2 tsp. salt
  • 1 tsp. vanilla extract
  • 125g strawberry yoghurt
  • 125g strawberries, hulled and sliced


  1. Preheat the oven to 180C. Grease and line a 23cm cake tin. Sift together polenta, flour, salt and baking powder.

  2. Beat together the butter and sugar until pale and fluffy. Beat in the eggs one at a time. Sift in the dry ingredients and stir to combine, then stir in the vanilla, yoghurt and strawberries. Spoon into the prepared cake tin, level the top, then bake for 45-50 minutes.

If you like, add a hint of lemon zest for extra fresh flavour. Cake serves 8.
