An unusual but highly flavourful salsa, made with strawberries, tomatoes, chilli and coriander - serve with nacho crisps or alongside a spicy dish like a chilli con carne.
- 400g fresh strawberries, hulled and chopped
- 4 plum tomatoes
- 1 green chilli
- 2 garlic cloves
- Juice of 1 lime
- Small handful freshly chopped coriander
- 1 tbsp. extra-virgin olive oil
Seed and chop the tomatoes. Slice the chilli in half lengthways and scrape out the seeds using the back of the knife. Finely dice. Finely dice the garlic cloves.
Stir together the strawberries, tomatoes, chilli, garlic, lime juice, coriander and oil. Cover and leave to sit at room temperature for an hour before serving.
