These crumbly, delicious scones are made with one very surprising ingredient - strawberry yoghurt. It gives them a delicious flavour and a fantastic texture. Serve with clotted cream and strawberry jam.
- 225g plain flour
- 2 dstsp. baking powder
- 50g butter
- 125g strawberry yoghurt
- 2 tbsp. milk
Preheat oven to 220C. Sift the flour and baking powder into a large bowl.
Cut the butter into the flour using two bread knives or a pastry cutter until the mix is crumbly. Stir in the yoghurt to form a soft dough. Roll out on a lightly floured worktop until 2-3cm thick. Use a pastry cutter to cut out 12 scones.
Place scones onto a baking tray, 5cm apart. Brush the tops with milk and bake for 10 minutes or until lightly risen and golden brown. Serve warm.
