This fantastic sweet bread is flavoured with freshly chopped strawberries, bananas and white chocolate chips. Serve it warm from the oven, toasted and spread with butter.
- 400g wholemeal flour
- 100ml vegetable oil
- 1 tsp. each baking powder and salt
- 100g butter
- 180ml buttermilk
- 3 tbsp. brown sugar
- 10 large strawberries, hulled and chopped
- 2 bananas, mashed
- 100g white chocolate chips
Preheat oven to 180C and grease and line a loaf tin.
Mix together the flour, baking powder, salt and sugar. Stir in the oil and buttermilk until well combined, then fold in the banana, strawberries and white chocolate chips. Spoon into the prepared loaf tin.
Bake for 40 minutes, then reduce the heat to 150C and cook for a further 20-30 minutes or until a skewer inserted into the centre of the loaf comes out clean. Cool for 10 minutes then turn out and cool on a wire rack.
