Stuffed Lobster recipe

Preparation Time: 25 minutes | Cooking Time: 25 minutes

In this recipe, a whole fresh lobster is split open, then the meat is removed, mixed with breadcrumbs, herbs, butter, salt, pepper and parmesan before being baked until golden brown. A delicious dish that's perfect for a party, this is much easier to make than you might think.


  • 1 x 675g fresh lobster, ready to cook
  • 50g fresh breadcrumbs
  • 125g butter
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. dried tarragon
  • 1 tbsp. freshly chopped parsley
  • 2 tbsp. grated parmesan
  • 2 tsp. extra-virgin olive oil


  1. Bring a pot of water to the boil. Add the lobster, cover and cook for around 8 minutes. Remove from the pot, drain and leave to cool until you can handle it. Preheat oven to 200C.

  2. Split the lobster in half lengthways using a sharp knife. Remove the black strip if present. Remove the meat, chop and mix in a bowl with the breadcrumbs, butter, salt, pepper, tarragon, parsley and parmesan. Stuff back into the lobster and drizzle with oil. Place onto a baking tray and cook for 10-15 minutes until browned.

You could add some garlic or a little chopped shallot to the lobster mix if you like for a little extra flavour. Recipe serves 2.
