In this easy peasy side dish, aubergines are fried until crisp, then simmered with mint, garlic, vinegar and sugar to give them a rich sweet and sour flavour.
- 4 aubergines
- 4 mint leaves
- 2 garlic cloves
- 2 tbsp. white wine vinegar
- 1 tbsp. caster sugar
- Salt and pepper
Trim the aubergine and slice into sticks. Finely chop the mint leaves. Mince the garlic cloves.
Heat a little oil in a frying pan and add the aubergines. Fry until golden brown. Add the mint and garlic and fry for 30 seconds. Add the vinegar, sugar and salt and pepper. Simmer for 1-2 minutes until most of the liquid has evaporated. Serve hot or cold to taste.
