Sweet and Sour Aubergines recipe

In this easy peasy side dish, aubergines are fried until crisp, then simmered with mint, garlic, vinegar and sugar to give them a rich sweet and sour flavour.


  • 4 aubergines
  • 4 mint leaves
  • 2 garlic cloves
  • 2 tbsp. white wine vinegar
  • 1 tbsp. caster sugar
  • Salt and pepper
  • Oil


  1. Trim the aubergine and slice into sticks. Finely chop the mint leaves. Mince the garlic cloves.

  2. Heat a little oil in a frying pan and add the aubergines. Fry until golden brown. Add the mint and garlic and fry for 30 seconds. Add the vinegar, sugar and salt and pepper. Simmer for 1-2 minutes until most of the liquid has evaporated. Serve hot or cold to taste.

Make the dish a little sweeter by using balsamic instead of white wine vinegar as it is a little sweeter. Recipe serves 4.
