Celeriac is mashed down with apples and carrots in this easy yet super delicious side dish. Cream and butter add richness, whilst salt, pepper and chopped parsley really lift the flavours!
- 500g carrots
- 2 large sweet apples
- 400g celeriac
- 50ml double cream
- 2 tbsp. butter
- Salt and pepper
- Small handful freshly chopped parsley
Peel and core the apples. Chop. Peel the celeriac and chop into chunks and roughly chop the carrots. Put into a large pot and cover with cold water. Bring to the boil, reduce to a simmer and cook for 20-25 minutes or until very tender. Drain and return to the pan.
Mash the veg until smooth and creamy, then stir in the cream and beat in the butter until melted. Add salt and pepper to taste along with the parsley. Stir to combine.
