Sweet and Smoky BBQ Salmon recipe

Preparation Time: 10 minutes | Cooking Time: 20 minutes

This sweet, smoky and slightly charred salmon dish is a fantastic way to cook a whole salmon fillet. Serve it at your next BBQ as an alternative to the more traditional grilled or BBQ chicken.

  • 1 2kg salmon fillet, boned
  • 200g dark brown sugar
  • 175g runny honey
  • 125ml cider vinegar
  • Dash liquid smoke

  1. Preheat the BBQ for a high heat. Mix the sugar, honey, vinegar and liquid smoke together in a bowl.

  2. Brush one side of the salmon with the marinade and lay it marinade side down on the BBQ. Cook for about 7-8 minutes, brush the top and turn over. Cook for 7-8 minutes, turn and brush with more marinade. Cook for another 1-2 minutes on either side, brushing with more marinade, until cooked through to your liking.

Serve the salmon with a little more marinade on the side as a dip. No liquid smoke? Try Worcestershire sauce. Recipe serves 8.
