Sweet Sticky Red Onion Salmon recipe

Preparation Time: 5 minutes | Cooking Time: 20 minutes

Sweet and tender salmon fillets are topped with a sweet, sticky and ever-so-slightly sour red onion mix in this super simple recipe. Serve with creamy mash and garlicky green beans for an easy midweek dinner that's also posh enough for a dinner party.

  • 4 salmon fillets, boneless
  • 2 garlic cloves
  • 2 small red onions
  • 2 tbsp. honey
  • 3 tbsp. red wine vinegar
  • 2 tsp. each butter and oil
  • Salt and pepper

  1. Thinly slice the garlic cloves and red onions. Heat half the oil and butter together in a frying pan and add the garlic and onion. Fry gently for 10-15 minutes or until golden and soft. Whisk the honey, vinegar and some salt and pepper together then add to the onions and cook for another 3-5 minutes or until the onions turn sticky.

  2. Season the salmon fillets on either side and then heat the rest of the butter and oil together in a frying pan. Fry the salmon on either side for 3-4 minutes or until the fillets are cooked through to your liking. Spoon the red onions over to serve.

Don't have any red onions? Don't worry! Use regular onions and add a drop of balsamic for colour. Recipe serves 4.
