Swordfish with Mango & Ginger recipe

Preparation Time: 1 hours | Cooking Time: 30 minutes
This simple use of a store-cupboard staple, mango chutney, makes for a deliciously sweet and slightly sour marinade for swordfish. Swordfish is a real meaty fish, perfect for pairing with this sweet sauce. This recipe only contains 5 ingredients too, making it very simple.

  • 1kg swordfish steaks, boned and skinless
  • 285g mango chutney
  • 110ml dry sherry
  • 1 tbsp. minced ginger
  • 2 tbsp. lemon juice
  • Salt and pepper

  1. Place the swordfish steaks into a baking dish. In a bowl, combine the mango chutney, sherry, ginger, lemon juice and a little salt and pepper. Pour over the steaks, turning them to coat in the mixture.

  2. Cover and leave to marinate for 1 hour. Preheat the oven to 180C. Bake the steaks in the oven for 20-30 minutes, basting occasionally with the marinade.

If you like a little heat, try adding a freshly minced chilli or some sweet chilli sauce to the marinade. Recipe serves 4.
