Swordfish is cooked in a delicious garlic butter before being topped with a limey tomato and basil sauce in this easy yet impressive recipe. Serve as a dinner party starter or as a quick lunch.
- 2 x 200g swordfish steaks
- 110g butter
- 3 tomatoes
- 2 garlic cloves
- 2 tbsp. lime juice
- 120g basil
Cube the tomatoes and mince the garlic. Finely chop the basil. Preheat oven to 180C.
Heat half the butter with half the garlic until the butter melts. Once melted, add the tomatoes, lime juice and basil. Cook until just under boiling point then reduce heat to low and keep warm. Heat the rest of the butter and garlic together in another pan and melt.
Put the swordfish into a baking dish and drizzle with the garlicky butter. Bake for 15 minutes, turning once.
To serve, spoon the tomato sauce over the top and drizzle with any of the cooking juices.
