Runner beans are cooked with plenty of olive oil, seasoning, garlic and coriander in this effective yet delicious meal. Eat it as a side, or it will even make a delicious main course when scooped up with warm pitta bread.
- 500g runner beans, trimmed and sliced
- 2 garlic cloves, minced
- Handful freshly chopped coriander
- 4 tbsp. extra-virgin olive oil
- Good pinch each salt and black pepper
Put the beans into a pot, drizzle with olive oil, season with salt and pepper then cover. Cook over a medium high heat until tender, stirring occasionally.
Add garlic and coriander and cook gently until the coriander just wilts. Serve hot.
