A great way to impart more flavour into your lobster is to steam it in a flavourful liquid, such as ale. In this recipe, lobster tails are steamed in ale, then served with a delicious mix of minced garlic, lemon juice, melted butter and parsley.
- 2 whole lobster tails
- 200ml ale
- Juice of 1 lemon
- 75g butter
- 2 garlic cloves
- Small handful chopped parsley
- Salt and pepper
Split lobster shells lengthways. Place the tails into a steamer basket. Pour ale into a saucepan and bring to the boil. Add the steamer insert, cover and steam for 8-10 minutes.
Meanwhile mince the garlic cloves. Melt the butter in a saucepan, whisk in the lemon juice, garlic and parsley and season to taste with salt and pepper. When the lobster is cooked, drizzle with the sauce.
