Thai Coconut Mushroom Curry recipe

Preparation Time: 10 minutes | Cooking Time: 20 minutes

This creamy yet tangy mushroom curry is flavoured with traditional Thai ingredients - galangal, kaffir lime leaves, fish sauce and Thai chillies combine to create a rich curry that'll leave you with a massive smile on your face. Serve with plain rice.


  • Punnet of fresh mushrooms
  • 3-4 Thai chillies
  • 1 tbsp. red Thai curry paste
  • 475ml coconut milk
  • 1 x 5cm piece galangal
  • 3 kaffir lime leaves
  • 4 tbsp. lime juice
  • 1 tbsp. fish sauce
  • 2 tsp. salt


  1. Thinly slice the mushrooms. Slice the chillies in half and remove the seeds. Thinly slice. Tear the lime leaves.

  2. Put the coconut milk and galangal in a saucepan and bring to a simmer. Stir in the curry paste, lime leaves and salt and simmer for 10 minutes. Add the mushrooms and simmer until tender.

  3. Take the pan off the heat and stir in the lime juice and fish sauce. Remove the galangal. Top with the chillies to serve.

If you like, you can add more veggies such as fresh corn or sugar snap peas. Recipe serves 2.
