Thyme Duck with Sweet Plum Sauce recipe

Preparation Time: 10 minutes | Cooking Time: 20 minutes

A simple yet elegant recipe, this thyme duck is very easy to prepare - and you can even pan fry the duck and prepare the sauce before guests arrive, then just finish the duck in the oven when you're ready to eat!


  • 2 duck breasts
  • 1 thyme sprig, leaves picked
  • 1 tbsp. each butter and oil
  • Salt and pepper
  • 1 shallot
  • 200g red plums
  • 50ml red wine
  • 250ml beef stock
  • 2 tbsp. brown sugar
  • 1 tbsp. oil


  1. Finely dice the shallot. Halve the plums, remove the stones and slice into thin wedges. Heat oil in a frying pan and fry the shallot until softened, around 5-7 minutes. Add the plums and sugar and stir, cooking until the sugar has dissolved. Add the red wine and stock and simmer for 15-20 minutes or until thickened and sweet.

  2. To cook the duck, score the duck fat and rub the thyme, salt and pepper into the duck. Heat butter and oil in a frying pan and fry the duck, skin down, for 6-7 minutes. Flip over and seal for 30 seconds, then baste with the butter and oil and transfer to a roasting tin. Bake at 190C for 5-7 minutes or until cooked to your liking. To serve, slice thinly on the diagonal and serve with the sauce.

If you prefer, use berries in the sauce in place of plums for a bramble inspired sauce. Recipe serves 2.
