Mangetout is roasted in the oven with salt, oil and dried thyme in this deliciously simple recipe - the perfect alternative to boiling them!
- 225g mangetout
- 1 tbsp. olive oil
- 1 small shallot, finely chopped
- 1 tsp. dried thyme
- Pinch of salt
Spread mangetout in a single layer on a greaseproof paper lined tray.
Sprinkle with oil, shallot, thyme and salt. Bake at 250C for 5 minutes or until tender.
