Thyme Roasted Mangetout recipe

Preparation Time: 10 minutes | Cooking Time: 5 minutes

Mangetout is roasted in the oven with salt, oil and dried thyme in this deliciously simple recipe - the perfect alternative to boiling them!


  • 225g mangetout
  • 1 tbsp. olive oil
  • 1 small shallot, finely chopped
  • 1 tsp. dried thyme
  • Pinch of salt


  1. Spread mangetout in a single layer on a greaseproof paper lined tray.

  2. Sprinkle with oil, shallot, thyme and salt. Bake at 250C for 5 minutes or until tender.

For a bit of spice, use dried chilli flakes instead of dried thyme. Recipe serves 2.
