Toffee Mallow Banana Cake recipe

Bananas are mashed into a simple cinnamon flavoured cake batter, before being baked and then filled with dulce de leche and a marshmallow cream. Perfect for parties and children will love it!


  • 165g butter
  • 165g light muscovado sugar
  • 325g self-raising flour
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 4 large eggs
  • 4 tbsp. milk
  • 2 large ripe bananas, mashed
  • 400g dulce de leche
  • 300ml double cream
  • 100g marshmallows, finely chopped
  • 1 banana, finely chopped


  1. Preheat the oven to 170C. Grease and line a 21cm loose-bottomed cake tin. Beat the butter and sugar until pale and fluffy, then beat in the eggs, one at a time, adding a tbsp. of flour if they curdle. Sift in the flour, baking powder and cinnamon, stir to combine, then stir in the milk and fold in the bananas. Spoon into the cake tin.

  2. Bake the cake for 45-50 minutes or until tested done with a skewer, then cool on a wire rack. Once cool, carefully slice into three equal layers.

  3. Spread each layer, including the top, with 1/3 of the dulce de leche. Beat the cream until soft peaks form then fold in the marshmallows and banana. Spread half onto the bottom and middle slices of cake, then stack, with the dulce de leche layer on top. If you like, garnish with extra marshmallows.

Another lovely addition to this cake would be chunks of soft fudge or toffee. Recipe serves 8.
