Tomato and Basil Scones recipe

These scones have the delicious taste of the Mediterranean. Serve them with some mozzarella for a lovely snack.


  • 275g plain flour
  • 4 tsp. baking powder
  • 175ml buttermilk
  • Handful of fresh basil
  • 2 tsp. tomato puree
  • 1 plum tomato
  • Pinch of black pepper


  1. Preheat the oven to 230C and grease and line a baking tray. Finely chop the basil and roughly chop the tomato, removing the seeds.

  2. Sift together the flour, pepper and baking powder.

  3. In another bowl, mix together the tomato puree, tomato, basil and buttermilk.

  4. Gradually add the wet mixture to the dry mixture, stirring until everything comes together.

  5. Knead the dough for a minute or so until it becomes smoother.

  6. Roll the dough out and then cut out scones from it, or divide the dough into 15 balls and flatten them with your hands.

  7. Put the scones onto the baking tray and cook them for 12-15 minutes or until golden.

This recipe makes 15 scones, which is around eight servings. If you haven’t got any basil to hand, fresh parsley is a good substitute.
