In this recipe, cherry tomatoes are cooked with a little balsamic vinegar, onions and garlic until slightly broken down but still full of flavour, then spooned over pork chops and garnished with salty feta for a healthy twist on pork chops.
- 4 pork chops
- 1 onion
- 3 garlic cloves
- 2 tbsp. oil
- Salt and black pepper
- 125g cherry tomatoes
- 125g yellow cherry tomatoes (if you can find them, if not, try a speciality cherry tomato from the supermarket)
- 1 tbsp. dried basil
- 2 tbsp. balsamic vinegar
- 100g feta cheese
Finely dice the onion and mince the garlic cloves. Halve the tomatoes.
Heat half the oil in a frying pan and add the onion and garlic. Fry gently over a low heat until translucent and sweet. Heat the rest of the oil in another frying pan, season the chops and fry until cooked through to your liking.
In the first frying pan, add the cherry tomatoes, basil and balsamic to the onion and garlic mix. Cook gently until the tomatoes are tender and season to taste with salt and pepper.
To serve, spoon the sauce over the chops and sprinkle with the crumbled feta.
