Traditional Beef Fondue recipe

This is a recipe for beef fondue that involves preparation of the beef that's cooked at the table. We also include a few quick home-made sauces to serve with the beef.


1kg beef fillet
1 bay leaf
1 sprig of thyme
1 sprig of rosemary
1 clove of garlic
Vegetable oil
Herby Sauce:
250g high-quality mayonnaise
1 shallot
Few parsley sprigs
Few chive sprigs
1 clove of garlic
Red Pepper Sauce:
250g mild salsa
2 roasted red peppers
1 tsp. hot sauce


  1. Dice the beef into thin strips, discarding any fat or stringy bits. Give each person a few fondue skewers and a pile of the beef so that they don’t have to share skewers.

  2. Place the oil into the fondue pot. Fill it so it’s around two inches from the top.

  3. Place the bay leaf, rosemary sprig, thyme sprig and garlic clove into the oil.

  4. When the oil starts to bubble, remove the flavourings from it with a slotted spoon, being careful not to burn yourself.

  5. Your guests can then dip their beef into the hot flavoured oil and cook it to their liking.

  6. For the herby sauce, finely chop the parsley, chives, shallot and garlic. Mix well with the mayonnaise.

  7. For the red pepper sauce, finely chop the roasted red peppers and mix them with the salsa. Add hot sauce to taste.
