Traditional Scones recipe

We'll start with one of the most simple scone recipes – this recipe will give you lightly sweetened, very simple scones.

  • 400g plain flour
  • 250ml buttermilk
  • 175g softened butter
  • 100g caster sugar
  • ½ tsp. baking powder
  • ½ tsp. bicarbonate of soda
  • ¾ tsp. salt

  1. Preheat the oven to 220C.

  2. Sift together the flour, baking powder, bicarb and salt. Add the sugar and mix together.

  3. Add the butter into the dry ingredients and cut it into the mixture by using two knives or a fork. Continue to cut the butter until you have a mixture that resembles breadcrumbs.

  4. Add the buttermilk and mix well until you have a moist dough.

  5. Divide the dough into 12 balls and flatten them slightly with your hands, or roll the dough out and cut out 12 scones from it.

  6. Place the scones onto a baking tray and brush them with a little bit of buttermilk. Bake for 12 minutes.

These scones are lovely with just a simple bit of cream and jam. This recipe makes 12 scones which will give you six servings.
