Perfect for chocoholics, these decadent triple chocolate muffins are flavoured with cocoa powder and melted dark chocolate, then studded with milk and white chocolate chunks. Delicious warm straight from the oven.
- 325g self-raising flour
- 125g brown sugar
- 125g milk chocolate chunks
- 125g white chocolate chunks
- 175g dark chocolate, melted, cooled slightly
- 365ml milk
- 100ml veg oil
- 2 eggs
- 1 tbsp. baking powder
- 2 tsp. vanilla extract
- 75g unsweetened cocoa powder
Preheat oven to 180C. Grease or line a 12 hole muffin tin.
Combine the flour, sugar, baking powder and cocoa powder in a large bowl. Beat the milk, veg oil, eggs and vanilla together. Add the wet mix to the dry mix and stir until just combined. Fold in the melted chocolate and the milk and white chocolate chunks.
Divide the batter between the muffin liners. Bake at 20 minutes or until tested done with a skewer. Serve warm from the oven or cooled the next day.
