This fantastic tzatziki recipe is packed with loads of yummy flavours - garlic, olive oil, white wine vinegar and rich Greek yoghurt. Serve it with veggie sticks or tortilla chips or crisps.
- 500g strained full fat yoghurt
- 1 large cucumber
- 3 fat garlic cloves
- 4 tbsp. extra-virgin olive oil
- 2 tbsp. white wine vinegar
- Salt and pepper
Strain the liquid from the yoghurt through a cheesecloth. Slice the cucumber in half, scrape out the seeds with a spoon then grate the flesh. Press into a sieve to remove excess water.
Stir cucumber into the yoghurt. Crush the garlic cloves and add to the yoghurt along with olive oil, vinegar and salt and pepper. Stir to combine and then taste, check the seasoning and add more if needed.
