Vanilla Buttercream recipe

Preparation Time: 10 minutes

This simple buttercream recipe is perfect for icing cupcakes and round cakes. It's creamy, sweet, slightly salty and wonderfully soft. It can be coloured really easily too.


  • 600g icing sugar
  • 250g butter (use proper butter)
  • 1 tsp. vanilla extract
  • 2 tbsp. milk


  1. Beat together the butter and vanilla extract until softened.

  2. Gradually beat in the icing sugar, a little at a time, until completely incorporated. Beat in the milk.

  3. Continue beating the icing until light and fluffy. Use to ice the cupcakes.

I'd recommend using the lightest colour butter you can find - it means the icing will be almost white in colour, making it perfect for colouring afterwards. Recipe makes enough icing to ice 20 cupcakes.
