Vanilla Cupcakes recipe

Once you have a yummy recipe for vanilla cupcakes up your sleeve, you'll never go wrong - so take this recipe and run with it! Ice with whatever you fancy - chocolate buttercream, lemon water icing, rose buttercream... the options are endless!


  • 200g plain flour
  • 200g caster sugar
  • 115g butter
  • 2 eggs
  • 2 tsp. vanilla
  • 1 3/4 tsp. baking powder
  • 120ml milk


  1. Preheat oven to 180C. Grease 12 cupcake liners and place onto a baking tray.

  2. Beat together the butter and sugar until pale and fluffy. Add the eggs one at a time, beating well after each addition, then beat in the vanilla.

  3. Sift in the flour and baking powder and stir to combine, then add the milk and stir until you have a smooth cake batter. Divide between the cake liners. Bake for 20-25 minutes until golden and springy to the touch. Leave to cool on a wire rack.

If you like, omit the vanilla and use a little lemon extract or orange extract to make flavoured cupcakes. Recipe makes 12 cupcakes.
