Spicy Vegetable, Chickpea and Couscous Soup recipe

Packed with goodness, this yummy soup contains loads of veggies, spices, chickpeas and couscous - it's wonderfully filling and makes for a delicious lunch. Serve with chunks of warm bread for a spectacularly yummy meal.


  • 1 onion
  • 2 carrots
  • 3 celery stalks
  • 4 tbsp. couscous
  • 1 x 400g tin each chopped tomatoes and chickpeas
  • 500ml chicken stock
  • 2 tbsp. each tomato puree and harissa paste
  • 1 tsp. ground cumin
  • Oil
  • Salt and pepper


1. Finely chop the onion, carrots and celery stalks. Heat oil in a frying pan and fry the veg for 10-15 minutes until soft, sweet and golden. Add the tomato puree, harissa paste and cumin and stir. Cook for 3-4 minutes, then add the tomatoes, chickpeas, chicken stock, salt and pepper. Simmer for 30 minutes, then add the couscous, simmer for another 5 minutes and serve.

If you want, you can add some meat to the soup - try simmering some chicken thighs in the soup for a lovely meaty flavour. Recipe serves 4.
