Vegan Pancakes recipe

Preparation Time: 10 minutes | Cooking Time: 10 minutes

These vegan pancakes don't use eggs or milk, but they're still fluffy and light. Delicious topped with berries or syrup.

Ingredients

  • 150g plain flour
  • 2 tbsp. caster sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 300ml water
  • 1 tbsp. oil

Directions

  1. Whisk together water and oil.

  2. Sift together flour, sugar, baking powder and salt. Add the water/oil mix and whisk to combine. The batter will be slightly lumpy.

  3. To cook, grease a frying pan and heat over a medium heat. Drop the batter by the large spoonful into the frying pan and cook until bubbles appear on the surface of the pancake, then flip over and cook until golden brown on the other side.

You could also top these pancakes with a berry compote - delicious! Recipe makes 6 pancakes.
