Vegetarian Satay Salad recipe

This is a really yummy dish for any vegetarians. If you're a meat eater, just add a shredded chicken breast in for some more flavour.


  • 300g tofu pieces
  • 250g rice noodles
  • 150g sugar snap peas
  • 100ml cold water
  • 2 medium carrots
  • 1 red pepper
  • 1 bunch of spring onions
  • 1 red chilli
  • 3 tbsp. peanut butter
  • 2 tbsp. chilli sauce
  • 1 tbsp. sunflower oil
  • 1 tbsp. sesame oil
  • Juice of 3 limes


  1. Prepare the vegetables. Finely slice the carrots. Deseed and finely slice the red pepper. Finely chop the spring onions. Deseed and finely chop the red chilli.

  2. Heat the sunflower oil in a wok and add the tofu. Cook for around 5 to 6 minutes or until warmed through.

  3. Drain the noodles then mix with the sesame oil, then leave to one side.

  4. Whisk together the peanut butter, lime juice, chilli sauce, water and season with a bit of black pepper.

  5. Add the noodles, tofu, sugar snap peas, chilli, carrots and spring onions into the dressing and mix together with your hands.

  6. Serve.
