Venison and Veggie Stir Fry recipe

Preparation Time: 10 minutes | Cooking Time: 10 minutes

A light, bright and colourful stir fry, this delicious recipe is healthy too. Venison and mixed veggies are stir-fried in sesame oil for a wonderfully nutty flavour, then drizzled with a sweet chilli dressing. Serve with rice noodles for a filling meal.

  • 300g venison
  • 2 spring onions
  • 8 cherry tomatoes
  • 1 yellow pepper
  • 1 tbsp. soy sauce
  • 1 tbsp. sesame oil
  • Salt and pepper
  • 3 tbsp. sweet chilli sauce
  • 2 tbsp. olive oil
  • 1 tbsp. sesame oil
  • Dash of rice wine vinegar

  1. Slice the venison into thin strips and thinly slice the spring onions on the diagonal. Chop the pepper in half, remove the seeds and pith and slice into strips.

  2. Heat 1 tbsp. sesame oil in a wok. Fry tomatoes for 2 minutes, then add the venison, spring onions and yellow pepper and stir-fry for 6-7 minutes or until the venison is nearly cooked. Add the soy sauce and continue cooking for 2-3 minutes.

  3. Whisk together chilli sauce, olive oil, sesame oil and vinegar to taste. To serve, drizzle over the stir fry.

Add any veggies you like to this dish - baby corn, green beans and water chestnuts are all great coices. Recipe serves 2.
