Crunchy cabbage, celery and grapes combine with a light mayo and vinegar dressing in this super-simple salad recipe. Serve alongside a grilled lean chicken breast or roast meats.
- 1 white cabbage
- 4 celery stalks
- 2 apples
- Handful green grapes, seedless
- 6 tbsp. light mayo
- 1 tbsp. white wine vinegar
- Salt and pepper
- 50g walnuts
Finely shred the cabbage. Thinly slice the celery. Peel and core the apples and thinly slice and halve the grapes. Toss the cabbage, celery, apples and grapes in a bowl.
Whisk together the mayo, cinegar and salt and pepper to taste. Pour over the veggies and stir well to coat. To serve, scatter the salad with the walnuts.
