Waldorf Salad recipe

Waldorf salad is a classic salad made with apples, celery and grapes. It's a great light lunch or dinner but it's also wonderful with roast meat as a side dish. This recipe is a little bit different to the classic in that mayonnaise is mixed with a little apple juice and yoghurt. This gives it a lovely tart flavour that works well with the sweetness of the salad.

Ingredients

  • 3 tart apples
  • 2 stalks celery
  • 2 spring onions
  • 175g seedless grapes
  • 2 tbsp. walnuts
  • 2 tbsp. mayonnaise
  • 2 tbsp. natural yoghurt
  • 3 tbsp. apple juice
  • Salt and pepper
  • 1 tbsp. lemon juice
  • 1 bunch watercress

Directions

  1. Wash and dry the vegetables. Core the apple. Chop it into chunks. Finely chop the celery and spring onions. Combine the apple, celery, grapes, spring onions and lemon juice in a bowl.

  2. Whisk together the mayonnaise, yoghurt and apple juice. Season well with salt and pepper and pour over the apple mixture. Toss to cover.

  3. Sprinkle the watercress over the top of the salad and sprinkle the walnuts over the top to serve.

This recipe makes four good portions of salad. For a bit of extra bite, try adding 100g of chopped stilton cheese.
