Walnuts and oats form the topping for this sweet and delicious apple and pear crumble. Serve with plenty of warm vanilla custard or ice cream.
- 500g apples
- 500g pears
- Zest and juice of 1/2 lemon
- 6 tbsp. light muscovado sugar
- 100g walnuts
- 175g wholemeal flour
- 85g light muscovado sugar
- 85g butter, cubed
Preheat oven to 170C. Peel and core apples and pears and chop into chunks. Put apples, sugar, lemon juice and zest into a saucepan and cook for 3-4 minutes, then stir in the pears and cook for a further 2-3 minutes. Spoon into a pudding dish and flatten.
Whiz half the walnuts in a blender until finely chopped. Add flour, sugar and butter and pulse until the mix looks like rough breadcrumbs. Crumble the rest of the walnuts and stir in. Sprinkle the crumble evenly over the fruit filling then bake for 20-25 minutes or until golden.
