Bread Machine Walnut and Blueberry Cake recipe

This not-too-sweet cake is made very simply in the bread machine. Flavoured with fresh blueberries, lemon zest and walnuts, it's delicious served warm from the machine with a dollop of double cream.


  • 75g softened butter
  • 200g caster sugar
  • 310g plain flour
  • 120ml milk
  • 2 eggs
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. bicarbonate of soda
  • 1 tsp. salt
  • 150g blueberries
  • 75g chopped walnuts
  • 1 tsp. grated lemon zest


  1. Beat butter and sugar together until pale and creamy, then beat in the eggs one at a time. Sift in the flour, baking powder, bicarb and salt and stir until combined, then loosen with the milk. Fold in the blueberries, walnuts and lemon zest.

  2. Spray the inside of the bread machine with cooking spray then pour in the cake batter. Select Quick Bread or Cake then press Start.

The cake is done when a skewer inserted into the centre comes out clean. Recipe makes 1 loaf-sized cake.
