This cake is packed full of fresh flavours and delicious ingredients - fresh orange and cranberry give it zing, while walnuts give it a lovely caramelly crunch. Delicious fresh from the oven or toasted and spread with butter.
- 250g plain flour
- 150g caster sugar
- 3/4 tsp. salt
- 1 1/2 tsp. baking powder + 1/2 tsp. bicarbonate of soda
- 100g fresh cranberries, chopped
- 75g walnuts, chopped
- 180ml fresh orange juice
- 1 tbsp. orange zest
- 2 tbsp. veg oil
- 1 egg
Preheat oven to 180C. Grease a loaf tin.
Sift together flour, salt, baking powder and bicarb. Stir in the sugar. Add the cranberries and walnuts and stir to combine. Beat together the egg, veg oil, orange juice and zest, then add the wet mix to the dry mix and stir until just combined.
Put the mix into the loaf tin, then bake for 50 minutes or until a skewer inserted into the centre of the cake comes out clean.
