This moreish fudge is really simple to make, and the brown sugar gives it a lovely flavour. Make it next time you have a special event or portion it out into little bags to give as a food gift.
- 450g dark brown soft sugar
- 175ml evaporated milk
- 30g butter
- 1 tsp. vanilla extract
- 70g walnuts, chopped
Butter a 20cm square tin and line with greaseproof.
In a large saucepan, stir together the brown sugar and evaporated milk. Bring to the boil and cool until the temperature reaches between 112-116C. Take off the heat and stir in the butter, vanilla and walnuts. Beat until the mixture is no longer glossy. Spread into the baking tin.
Score into squares, then set aside until firm. Cut into squares, then chill in the fridge.
