Walnut Oat Biscuits recipe

Oats give these biscuits a lovely chewy texture and a dense flake. Walnuts give them a slight fudgey flavour. They're fab with a cuppa but they're also brilliant for breakfast, too - sprinkle one or two biccies over a Greek yoghurt and serve with fruit.


  • 110g porridge oats
  • 100g plain flour
  • 4 tbsp. chopped walnuts
  • 100g butter
  • 125g dark brown sugar
  • 100g caster sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1/2 tsp. baking powder
  • Pinch salt


  1. Preheat oven to 190C. Grease a few baking trays.

  2. Beat together the butter, dark brown sugar and caster sugar until pale and fluffy. Beat in the egg and vanilla, then stir in the flour, oats, walnuts, baking powder and salt.

  3. Drop heaped tablespoons of the batter onto the baking trays, leaving around 5cm in between dollops so the biscuits can spread. Bake for 12-15 minutes or until lightly golden and crisp. Cool on wire racks.

If you like, you could add some chopped dates to the biscuits. Recipe makes 14 biscuits.
