This tasty nut-loaf combines the flavours of fresh nuts and sun-dried tomatoes for a Mediterranean inspired nut roast. Who said nut roasts were boring?!
- 200g mushrooms
- 200g walnuts
- 200g wholemeal breadcrumbs
- 100g sunflower seeds
- 100g milk
- 100g sun-dried tomatoes
- Handful chopped fresh basil
- 1 tbsp. Worcestershire sauce
- 1 onion
- 1 tbsp. olive oil
- Salt and pepper
Finely chop the onion and mushrooms and fry in the oil until golden and soft.
Grind walnuts and sunflower seeds in a processor until finely chopped.
Grease a loaf tin and preheat the oven to 180C.
Combine onions, mushrooms, ground nuts and seeds, breadcrumbs, milk, tomatoes, basil, Worcestershire sauce, salt and pepper.
Once thoroughly combined, press the mixture into the loaf tin and cook for 45 minutes or until firm and golden.
