- 1 watermelon
- 100g caster sugar
- Juice of two limes
- 3 gelatine leaves
Cut the watermelon in half. Chop it into chunks and place half into a blender. Blend until smooth with the sugar and lime juice, then push through a sieve into a large jug. You should have 600ml liquid - if not, make it up to 600ml with some fruit juice.
Soak the gelatine leaves in hot water for 5 minutes. Once soaked, add to the watermelon mixture and stir until dissolved. Pour into 4 serving dishes.
Leave in the fridge until half set, then stir in the remaining watermelon chunks. Leave to set overnight.
