Watermelon Jelly recipe

A brilliantly summery dessert, this jelly is made with fresh watermelon, making it a great choice for kids and adults alike. Serve it with some fresh fruit or some whipped cream - or even custard!


  • 1 watermelon
  • 100g caster sugar
  • Juice of two limes
  • 3 gelatine leaves


  1. Cut the watermelon in half. Chop it into chunks and place half into a blender. Blend until smooth with the sugar and lime juice, then push through a sieve into a large jug. You should have 600ml liquid - if not, make it up to 600ml with some fruit juice.

  2. Soak the gelatine leaves in hot water for 5 minutes. Once soaked, add to the watermelon mixture and stir until dissolved. Pour into 4 serving dishes.

  3. Leave in the fridge until half set, then stir in the remaining watermelon chunks. Leave to set overnight.

Add some strawberries to the jelly mixture for some wonderful flavour. Recipe serves 4.
