Welsh Cakes recipe

Preparation Time: 20 minutes | Cooking Time: 10 minutes

These traditional Welsh pancakes are the perfect after school or weekend treat and they make a brilliant alternative to teacakes. Flavoured with sultanas and nutmeg, they taste just like hot cross buns.


  • 300g plain flour
  • 1 1/2 tsp. baking powder
  • 120g caster sugar
  • 1/4 tsp. nutmeg
  • 1/4 tsp. allspice
  • 1/8 tsp. salt
  • 170g butter
  • 100g sultanas
  • 2 eggs
  • 60ml milk


  1. In a large bowl, sift together flour, baking powder, sugar, nutmeg, allspice and salt. Cut the butter into the dry ingredients using two butter knives or a pastry cutter until the mix resembles dry breadcrumbs.

  2. Stir in the sultanas, eggs and milk until combined and form a soft dough. Roll out until 1/2cm thick and then cut into 6cm pancakes using a round cutter.

  3. Heat a griddle pan over a medium-high heat. Add the pancakes and cook for 2-3 minutes on either side or until golden.

Spread these pancakes with butter and serve with a sprinkle of sugar. Recipe makes around 10 pancakes.
