These easy white chocolate and coconut truffles are easy to make and even easier to eat. Made with white chocolate, cream, butter and a little bit of coconut rum, these truffles are perfect for parties or for if you fancy something sweet mid-afternoon.
- 250g white chocolate
- 125g butter
- 150ml double cream
- 2 tbsp. coconut rum
Break chocolate into a bowl with the butter. Melt over a pan of simmering water and once melted, stir together.
Beat the cream with the rum until stiff peaks form, then gently fold the cream into the chocolate. Once combined, leave to chill in the fridge. Once set, scoop out the mix and roll into balls using clean hands dipped in icing sugar. Leave to set once more bfefoe serving.
