Whole BBQ Turkey recipe

This is an unusual but fantastic meal to cook on the BBQ - a whole turkey. Serve this with roast potatoes, or even some chips. This would be lovely with a big mixed salad, too.

Ingredients

  • 1 5.4kg whole turkey
  • 750ml red wine
  • 1 onion
  • Salt and pepper

Directions

  1. Get the BBQ ready by spreading the hot charcoal over the base of it.

  2. Wash the turkey, then season inside and out with the salt and pepper. Put the onion inside the turkey, place into a deep roasting tin and add the wine.

  3. Cover the tin with foil and place onto the BBQ. Shut the lid of the BBQ and open the vents.

  4. Cook the turkey for an hour and a half, basting frequently. Top up the liquid with water if the wine evaporates off.

You could just as easily cook the turkey in white wine or stock if you don't like the strong taste of red wine or if you are serving this to children. This recipe serves 12.
