Wholemeal Blueberry Pancakes recipe

Preparation Time: 25 minutes | Cooking Time: 10 minutes

These delicious wholemeal blueberry pancakes are a healthy alternative to regular blueberry pancakes, sweetened with a little honey. Serve with sliced bananas and a little more honey drizzled over the top.

Ingredients

  • 250g buttermilk
  • 100g blueberries
  • 1 egg
  • 125g wholemeal flour
  • 1 1/2 tsp. baking powder
  • Pinch of salt
  • 2 tbsp. runny honey

Directions

  1. Whisk flour, baking powder and salt in a bowl. Whisk buttermilk, egg and honey. Gradually add the wet mix to the dry mix, stir well until a loose batter forms and then fold in the blueberries. Sit for 10 minutes.

  2. Heat a little oil or cooking spray in a frying pan. Drop the batter by the spoonful into the pan and fry over a medium heat. When the pancakes start to turn golden and dry around the edges, flip. Fry for another 3-4 minutes or until golden on both sides. Serve warm.

If you prefer, you can sweeten these pancakes with sugar or sweetener. Recipe serves 4.
