Winter Pear, Apple and Pecan Salad with Halloumi recipe

Salty halloumi perfectly compliments sweet pear, apple and pecan in this delicious recipe. Perfect for lunch or as an impressive dinner party starter.


  • 2 eating apples
  • 2 pears
  • Juice of 2 lemons
  • 2 tbsp. olive oil
  • 2 tbsp. runny honey
  • 1/2 tbsp. wholegrain mustard
  • 500g halloumi
  • 100g pecans
  • 100g mixed salad greens


  1. Peel, core and thinly slice the apples. Peel, core and slice the pears into matchsticks. Whisk lemon juice, oil, honey and mustard together and pour half over the apples and pears. Toss to coat, then cover and leave to sit for an hour or so.

  2. Slice the halloumi. Heat a little oil in a large frying pan and add the halloumi slices. Fry for 2-3 minutes on either side or until golden brown.

  3. To serve, drain the fruit and discard the dressing. Pile onto a plate with the salad greens, top with the halloumi then drizzle on the remaining 1/2 of the dressing. Sprinkle pecans over the top to serve.

You could also use walnuts in this delicious salad. Recipe serves 4-6.
