This is a great way to get the kids to eat more vegetables – it's vegetables baked into a yummy Yorkshire pudding. Just make sure to choose vegetables that you all enjoy to make this a lovely, satisfying meal.
- 4 eggs
- 100g plain flour
- 250ml milk
- 30g butter
- 500g fresh uncooked vegetables – try broccoli, baby corn, carrots, peas etc.
- 1 tbsp. chopped chives
- Salt and pepper
In a large bowl, sift the flour with some salt. Make a well in the centre of the flour.
In a jug, beat the eggs with the milk. Gradually pour the milk and egg mixture into the flour and whisk until combined and smooth.
Meanwhile, cook the vegetables by melting the butter over a low heat in a frying pan and then frying the veg for about five minutes. Season the vegetables well.
Sprinkle the chives into the vegetables and cook them for another few minutes.
Put the vegetables onto the bottom of a large baking dish.
Pour the batter over the vegetables and then cook the dish for about 35 minutes or until golden.
This pudding won’t rise that much as this is a slightly eggy batter, so don’t be alarmed if the end result is a bit flat!
