- 4 salmon fillets, boneless
- 6 tbsp. dried breadcrumbs
- Juice 1 lemon
- 2 tbsp. chopped parsley
- 4 tbsp. wholegrain mustard
- 50g soft cheese
Mix together the breadcrumbs, half the lemon juice, parsley and mustard.
Heat the oven to 200C. Arrange the salmon fillets on a foil-lined tray. Drizzle with the rest of the lemon juice. Spread with the soft cheese and press the crumb mixture onto the cheese.
Bake the fillets for 15 minutes or until the topping is crisp.
