Courgette, feta cheese and couscous are tossed together in a zingy lemon dressing in this healthy salad. Perfect for lunches, you could also serve this salad alongside grilled meats or tofu, or you could add some extra veggies to pad it out a bit.
- 300g couscous
- Vegetable stock
- 100g feta cheese
- 4 baby courgettes
- Small handful freshly chopped parsley
- 4 tbsp. extra virgin olive oil
- Juice and zest of 1 lemon
- Salt and pepper
- 1 tbsp. oil
Slice the courgettes. Brush with oil, season with salt and pepper and lay on a griddle pan. Fry for 2-3 minutes or until chargrilled and golden. Crumble the feta.
Place couscous into a bowl and cover with at least an inch of stock. Cover and leave to sit until fluffed up and tender. Whisk the oil, lemon juice, lemon zest and salt and pepper together. When the courgettes are cooked, add to the couscous along with the dressing and the parsley. Toss to combine. Sprinkle feta over to serve.
